Vegetarian Salad Dressings

We are in summer and the desire to eat fresh and undercooked foods sometimes leads us to repeat dressings on our salads. Dressing umeboshi

  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon umeboshi vinegar
  • 1 tablespoon concentrated apple juice
  • 1 tablespoon chopped fresh mint very thin

Vegetarian vinaigrette

  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon balsamic vinegar of Modena
  • 1 small teaspoon honey
  • 1 small teaspoon Tamari

Tamari sauce

  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon Tamari
  • 1 tablespoon balsamic vinegar of Modena

Pesto sauce

  • 1 parsley leaves
  • 1 bunch basil leaves
  • 100g of raw pine nuts
  • 1 pinch of sea salt
  • 2 small garlic cloves
  • 1/4 cup extra virgin olive oil
